The system consists of three main components: a storage tank; an immersion circuit with a boiler for heating the crushed grapes; and a maceration tank. The whole process takes place very quickly, in a continuous cycle with limited operating costs. But, more importantly, it guarantees constantly excellent results and the utmost respect for the products, which preserve all their original properties.
After maceration for just 45 minutes, the must is ready for vinification without the grape skins in normal tanks. There is no need to use complicated vinifiers because the color has already been extracted to perfection. The DTMA is a new machine that reduces the dimensions of crushed grape skins, considerably increasing the surface area of the film in contact with the must. This speeds up the maceration process, enabling the pressing stage to be brought forward, and improving the extraction of polyphenols and anthocyanins from the grapes. Being able to anticipate the pressing stage also reduces the amount of time the red wine tanks are occupied, thereby significantly increasing productivity.
The DTMA has been tested in Italy and Australia on five different varieties of grape and at six different wineries with a reduction of the maceration times by 35-50%. The wines produced during the trials and the subsequent tests showed that the organoleptic results were also better when the DTMA was used.

This is an innovative technology that exploits the action of ionic exchange resins, which can be regenerated perfectly with the aid of a sulfuric acid solution.
After passing through the bottle containing the resins, the quantity of potassium contained in the wine being stabilized is gradually reduced. By reading the pH values at the outlet, the operator can establish the resulting level of wine stabilization and continue the process until the required condition has been reached.

The ecoflot flotator is a machine suitable for clarifying grape must while it is pumping over, using only one tank, thus ensuring an effective and economically advantageous flotation process. This type of flotator for wine clarification is highly versatile because once the liquid has been saturated while the must is pumping over, a sample is collected to analyze the quality of the product: if this is still not adequate, pumping over and saturation can continue for as long as necessary.

Tartaric stabilization is a problem that every winery has to solve in order to produce good-quality wines, avoiding the drawback of tartaric acid crystal precipitation, which would negatively affect the consumer’s perception of the product. The action of the PolarSystem relies on a variation in temperature: the effect of cold temperatures can stabilize all types of wine, even carbonated wines, those with a high alcohol content, and those with a high concentration of coloring compounds.
The PolarSystem consists of PolarCryo units that can be combined with the PolarPoint laboratory cryostat for an efficient selection of the wine’s degree of stability, or with the PolarVortex system, which is suitable for treating even wines particularly difficult to stabilize.

The tubular membrane attached to the central drum considerably increases the area of the surface for straining the must through the circumferential perforated grids arranged in a ring all around the drum.
Using a Della Toffola press means reducing the number of working cycles and consequently the total pressing time by up to 50%. Very low working pressures can be applied and minimal displacements of the grape mass, achieving a gentle pressing action that protects the grapes from damage. The result is higher yields from smaller-sized systems and, above all, products of very high quality.
The presses are practical and easy to use, with a programmable automatic control system based on a digital control panel and a programmable onboard computer. The integrated washing system is based on an exclusive solution with moving balls that ensures excellent cleanliness and hygiene.

These Della Toffola rotary drum filters are quick and easy to set up and start: all inspections and adjustments are managed completely electronically by means of a single electric control panel and the formation of the filter cake is quick and trouble-free: in less than 30 minutes the machine is ready to start work.

The ELIMATIC system permits the ageing of the wine on the lees, with re-circulating and remixing managed by the control panel. The discharge of the residual solids and cleaning is managed by a mechanical hand and a built-in washing system is known as CLEANMATIC.
